One of the joys of eating heritage cheese is that we are saving these cheeses from extinction. It is through our enjoyment that these cheeses continue to be produced.

The following cheeses are examples of the last producers who are making these particular cheeses in the traditional fashion.

The last traditional, raw milk Cheshire being made. It is flaky, sweet and savory.

 

When you eat these artisan cheeses, you are supporting a traditional way of life. These cheeses can exist only because we want and enjoy them. What a beautiful cycle it is!
