The last of the Appalachian

Appalachian is our local cheese hero. It is made at Meadow Creek Dairy in Galax, VA. The last of the season has just arrived.

Appalachian is an Alpine-style cheese. It is made from the milk of cows on pasture.

Appalachian tasting notes

When animals are allowed to live their natural life cycle, they only produce milk when they have access to grass. Cheese is produced from the excess of that milk.

Meadow Creek Dairy follows that natural cycle. They produce cheese as long as the pastures thrive and then allow the cows to “dry off” (stop producing milk) in Winter.

Just this week cheese production has begun at the dairy.

We get to enjoy the last of last seasons Appalachian now.
